Date Flavored Nut Milks

All kinds of plant-based milks are popular right now. Our recipe shows you how to kick things up a notch by making your own, flavored with DateME date paste and a dash of vanilla. We tried walnut and cashew variations, delicious with the natural sweetness of date paste.

Ingredients

Using Walnut Milk:
  • 1 cup raw walnuts
  • 3½ cups water
  • ¼ cup DateME Date Paste
  • 1 tsp. vanilla extract
  • pinch of salt
Using Cashew Milk:
  • 1 cup raw cashews
  • 3 cups water
  • 2 Tbsp. DateME Date Paste
  • 1 tsp. vanilla extract
  • pinch of salt

Directions

  1. For each of the nut milks, pour the nuts into a container or jar and cover them with water. Allow them to soak for 4 hours in the refrigerator.
  2. Drain the nuts and pour them along with the water, date paste, vanilla extract, and salt into a blender. Blend the mixture together for about 30-45 seconds.
  3. Use cheesecloth, a nut milk bag, or a fine strainer to strain the nut milk.
  4. Optionally, scrape the remaining nut pulp out of the cheesecloth or strainer and put it back into the blender. Add a little additional water and strain again.
  5. Store the date flavored nut milk in an airtight jar and use within 3-4 days.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 3 ice cubes
  • ¼ cup DateME Date Paste
  • 1 tsp. vanilla extract
  • ¼-½ tsp. pumpkin pie spice
  • pinch of salt

Directions

Serves 2

Blend all ingredients together in a high-speed blender until smooth. Split into two glasses and enjoy!

Our blueberry chia breakfast parfait may look fancy, but it is a snap to put together. Sweetened naturally with DateME Date Paste, it has blueberries, chia, and oats for a nutritious start to your day.

Vegan Blueberry Chia and Oat Breakfast Parfaits made with DateME Date Paste

Ingredients

  • 2½ Tbsp. DateME Date Paste
  • 2 Tbsp. chia seeds
  • ¼ cup + 2 Tbsp. rolled oats
  • 1 cup milk of choice (almond, coconut, etc.)
  • 1 cup blueberries (frozen or fresh)
  • 2 Tbsp. unsweetened shredded coconut
  • 1 Tbsp. sliced almonds
  • 1 tsp. vanilla extract
  • ½ cinnamon

Directions

  1. In a blender, combine the date paste, milk, vanilla, cinnamon, half the chia seeds, and 2 tablespoons of the rolled oats.
  2. Stir in the remaining oats and chia seeds.
  3. In a tall glass, layer a third of the oat mixture, then half of the blueberries, then another third of the oats, followed by the shredded coconut. Add the last of the oats and top them with the rest of the blueberries and almonds.
  4. Refrigerate for a few hours or overnight. Top with additional milk of choice prior to serving, if desired.

Date Energy Snack Trio

Dates are a very common main ingredient for energy snacks. This is because of the many nutritional benefits of dates. Date paste provides all of the same goodness but is much easier to use in recipes. We rolled our date energy snacks in coconut, sesame seeds, and cocoa powder, but you can get creative and use whatever ingredients you have on hand!

Ingredients

  • 1 cup DateME Date Paste
  • 2 Tbsp. ground flaxseed
  • 1 Tbsp. almond butter
  • ½ tsp. vanilla extract
  • 3 Tbsp. unsweetened shredded coconut
  • 2-3 Tbsp. sesame seeds
  • 2-3 Tbsp. cocoa powder

Directions

  1. In a bowl, mix together the date paste, flaxseed, almond butter, and vanilla extract. If your almond butter is unsalted, add a small pinch of salt. Shape the paste into 1” balls.
  2. Place the coconut, sesame seeds, and cocoa powder in three shallow balls. Split up the date balls so that ⅓ of the balls get rolled in each topping. Gently press the ball into the topping as you roll them. Place the balls on a parchment covered tray and refrigerate for 30 minutes before enjoying.
  3. Note: You can roll the date ball snacks in anything you’d like. For more variety, try crushed nuts or cacao nibs!

Ingredients

  • 2 cups coconut milk
  • 1½ cups raspberries, separated
  • 2-3 Tbsp. DateME Date Paste

Directions

Makes 4-6 Ice Pops

  1. Blend coconut milk with date paste and 1 cup of raspberries until smooth. Stir in remaining ½ cup of raspberries.
  2. Pour or spoon mixture into ice pop molds, leaving a small amount of space at the top of the molds to allow for expansion.
  3. Freeze for at least 4 hours. To release the ice pops, run the molds under warm water.

Serves 2

  1. Mix all ingredients together in a blender for 10-15 seconds or until smooth.
  2. Pour into two glasses. Top with whipped cream and a pineapple slice!

Watermelon and feta salad has become a classic for warm weather dining. Our balsamic vinaigrette made with DateME date paste gives it a little something extra.

Ingredients

For the Dressing:

  • ½ cup olive oil
  • ½ cup minus 1 Tbsp. balsamic vinegar
  • 1 Tbsp. DateME Date Paste
  • 1 tsp. dijon mustard
  • 1 clove garlic
  • ¼ + tsp. salt
  • ⅛ tsp. black pepper

For the Salad:

  • cubed seedless watermelon cut into ½”-¾” cubes (about 2 cups)
  • cubed/crumbled feta cheese (2-4 oz.)
  • cucumber, halved and cut into ¼” slices (½ large or 1 small cucumber)
  • baby arugula (2-3 cups)
  • fresh basil (handful)

Directions

  1. Mix all of the ingredients for the dressing together in a high speed blender until smooth. Add salt and pepper to taste.
  2. Place arugula on the bottom of a bowl or tray.
  3. In a separate bowl, add the cubed watermelon, sliced cucumber, and feta cheese. Drizzle the dressing on top and gently toss everything together.
  4. Top the arugula with the dressed watermelon, cucumber, and feta. Chop or mince the basil and sprinkle on top.

You will have plenty of dressing leftover for additional salads!

Chocolate Coconut Date Ice Cream

Ice cream season is almost upon us, and what could taste better than homemade ice cream that combines the fresh flavor of DateME date paste with chocolate and coconut? This recipe does not use any added sugar and is dairy free, gluten free, Paleo and vegan. Your kids will just know that it’s delicious!

Ingredients

  • 2¼ cup full-fat coconut milk (highly recommend Aroy-D brand)
  • ¼ cup cocoa powder
  • ½ vanilla extract
  • 3 Tbsp. DateME Date Paste
  • pinch of salt

Directions

  1. Pour the coconut milk into a large jar along with the cocoa powder, DateME date paste, vanilla extract, and salt.
  2. Using an immersion blender, blend all of the ingredients together for about 15 seconds or until the liquid becomes a thick mousse.
  3. Pour the ice cream mixture into a pyrex or freezer-friendly dish and cover. Place in the freezer for 2 hours.
  4. Remove ice cream from freezer and give it a stir.
  5. Place the ice cream back in the freezer for an additional 1-2 hours and then carefully scoop out and serve immediately.

If you end up freezing the ice cream for longer, allow it to sit out to soften so it will be easily scoopable. Alternatively, you can mix the frozen ice cream in a high-speed blender and re-freeze the mixture for 30-60 minutes before serving. Top with sprinkles, whipped cream, or your favorite ice cream topping!

Apple Pie Overnight Oats

Overnight oatmeal is a very easy way to get a healthy breakfast on the table without fighting the morning rush. This recipe incorporates DateME Date Paste with oats, almond butter, and spices that give it that special apple pie flavor!

Ingredients

  • 1 cup + 2 Tbsp. coconut milk
  • 3 Tbsp. DateME Date Paste
  • 2 Tbsp. almond butter (or other nut butter)
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • ¼ tsp. pumpkin spice
  • 2 small apples, chopped
  • 1 cup rolled oats
  • chopped nuts (to garnish)

Directions

  1. Blend the coconut milk, date paste, almond butter, cinnamon, and pumpkin spice together in a blender. Pour the mixture into a large jar and add the oats. Shake well.
  2. Pour a small amount of the oat mixture into two or three 6-8 oz. jars or ramekins. Layer the chopped apples on top, then pour the rest of the oat mixture on top of the apples.
  3. Cover the jars and refrigerate overnight. The next morning, uncover and top with chopped nuts, pumpkin pie spice, and any other toppings you’d like!
