Pumpkin Spice Latte

Yes, we know, not another pumpkin spice coffee drink. But our pumpkin spice latte is sweetened with DateME date paste and actually has a touch of pumpkin puree. Make it dairy-free using soy or any nut milk and an alternative whipped cream.

Ingredients

  • ¾ cup coffee
  • ⅓ cup milk of choice
  • 1 Tbsp. pumpkin puree
  • 1-2 Tbsp. DateME Date Paste
  • ½ tsp. vanilla extract
  • ½ tsp. pumpkin spice
  • whipped cream and ground nutmeg to garnish

Directions

  1. Combine all ingredients in a high-speed blender or with an immersion blender until well mixed.
  2. Serve hot or over ice. Garnish with whipped cream and ground nutmeg.

Date & Pumpkin Oatmeal

The best way to start the day is with a substantial breakfast, and date and pumpkin oatmeal definitely fits the bill. Sweetened with date paste, you’ll love the combination of oats, walnuts, and pumpkin.

Ingredients

  • 1 cup rolled oats
  • pinch of salt
  • 1½ cups water
  • ½ cup coconut milk or other milk
  • ½ cup pumpkin puree
  • 2-4 Tbsp. DateME Date Paste
  • ½ tsp. pumpkin pie spice
  • ½ tsp. vanilla extract
  • ¼ cup chopped walnuts
  • Optional garnish: sugar coated cranberries

Directions

  1. Place rolled oats, water, and sprinkle of salt in a pot over medium heat. Once the water begins to boil, reduce the heat to a simmer. Cook for about 3 minutes, or until the oats begin to thicken.
  2. Add the coconut milk, pumpkin puree, date paste, pumpkin pie spice, and vanilla extract.
  3. Stir for 3-5 minutes, or until the date paste has melted and blended into the oats. If the oats are too dry, add a little additional milk.
  4. Divide the oats into 2-3 bowls and top with chopped walnuts, additional milk, and any add-ins you like, such as sugared cranberries or nut butter.

Chocolate & Apple Dessert Nachos

Everybody loves nachos, but what about dessert nachos? Instead of tortilla chips and cheese, we use apples and delicious, ooey gooey chocolate! Top it off with your favorite nuts, coconut, pretzel pieces, or your favorite add-in for a fun, shareable dessert.

Ingredients

  • 6 small apples
  • 80g chocolate, melted
  • ⅓ cup DateME Date Paste
  • ¼ cup milk of choice
  • ½ tsp. vanilla extract
  • Add-ins such as chopped nuts, coconut flakes, dried fruit, etc.

Directions

  1. Cut the apples into thin slices. Set aside.
  2. Whisk together the date paste, milk, and vanilla extract until a smooth paste forms. If needed, use a little additional milk to thin.
  3. Arrange the apples on a platter.
  4. Spoon the date paste mixture into a piping bag or plastic bag with corner cut off. Drizzle the date paste mixture over the apples.
  5. Drizzle the melted chocolate on top.
  6. Finish with a sprinkle of your favorite add-ins, such as chopped nuts, coconut flakes, chocolate chips, or dried fruit.

Date Flavored Nut Milks

All kinds of plant-based milks are popular right now. Our recipe shows you how to kick things up a notch by making your own, flavored with DateME date paste and a dash of vanilla. We tried walnut and cashew variations, delicious with the natural sweetness of date paste.

Ingredients

Using Walnut Milk:
  • 1 cup raw walnuts
  • 3½ cups water
  • ¼ cup DateME Date Paste
  • 1 tsp. vanilla extract
  • pinch of salt
Using Cashew Milk:
  • 1 cup raw cashews
  • 3 cups water
  • 2 Tbsp. DateME Date Paste
  • 1 tsp. vanilla extract
  • pinch of salt

Directions

  1. For each of the nut milks, pour the nuts into a container or jar and cover them with water. Allow them to soak for 4 hours in the refrigerator.
  2. Drain the nuts and pour them along with the water, date paste, vanilla extract, and salt into a blender. Blend the mixture together for about 30-45 seconds.
  3. Use cheesecloth, a nut milk bag, or a fine strainer to strain the nut milk.
  4. Optionally, scrape the remaining nut pulp out of the cheesecloth or strainer and put it back into the blender. Add a little additional water and strain again.
  5. Store the date flavored nut milk in an airtight jar and use within 3-4 days.

Vegan Blueberry Chia and Oat Breakfast Parfaits made with DateME Date Paste

Ingredients

  • 2½ Tbsp. DateME Date Paste
  • 2 Tbsp. chia seeds
  • ¼ cup + 2 Tbsp. rolled oats
  • 1 cup milk of choice (almond, coconut, etc.)
  • 1 cup blueberries (frozen or fresh)
  • 2 Tbsp. unsweetened shredded coconut
  • 1 Tbsp. sliced almonds
  • 1 tsp. vanilla extract
  • ½ cinnamon

Directions

  1. In a blender, combine the date paste, milk, vanilla, cinnamon, half the chia seeds, and 2 tablespoons of the rolled oats.
  2. Stir in the remaining oats and chia seeds.
  3. In a tall glass, layer a third of the oat mixture, then half of the blueberries, then another third of the oats, followed by the shredded coconut. Add the last of the oats and top them with the rest of the blueberries and almonds.
  4. Refrigerate for a few hours or overnight. Top with additional milk of choice prior to serving, if desired.

Date Energy Snack Trio

Dates are a very common main ingredient for energy snacks. This is because of the many nutritional benefits of dates. Date paste provides all of the same goodness but is much easier to use in recipes. We rolled our date energy snacks in coconut, sesame seeds, and cocoa powder, but you can get creative and use whatever ingredients you have on hand!

Ingredients

  • 1 cup DateME Date Paste
  • 2 Tbsp. ground flaxseed
  • 1 Tbsp. almond butter
  • ½ tsp. vanilla extract
  • 3 Tbsp. unsweetened shredded coconut
  • 2-3 Tbsp. sesame seeds
  • 2-3 Tbsp. cocoa powder

Directions

  1. In a bowl, mix together the date paste, flaxseed, almond butter, and vanilla extract. If your almond butter is unsalted, add a small pinch of salt. Shape the paste into 1” balls.
  2. Place the coconut, sesame seeds, and cocoa powder in three shallow balls. Split up the date balls so that ⅓ of the balls get rolled in each topping. Gently press the ball into the topping as you roll them. Place the balls on a parchment covered tray and refrigerate for 30 minutes before enjoying.
  3. Note: You can roll the date ball snacks in anything you’d like. For more variety, try crushed nuts or cacao nibs!

Chili, Garlic & Date Enchilada Sauce

This is an unusual but delicious enchilada sauce that uses date paste for a hint of sweetness. It provides a nice balance to the tang of the vinegar and the zip of all the spices used. You can also add some chopped tomatoes and serve with tortilla chips.

Chili Garlic Enchilada Sauce made with DateME date paste

Ingredients

  • 1 Tbsp. olive oil
  • 1 cup red onion, minced
  • 1 clove garlic, minced
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • ½ tsp. paprika
  • 1¾ cups water or chicken broth
  • 3½ Tbsp. tomato paste
  • 3 Tbsp. DateME Date Paste
  • 1 tsp. apple cider vinegar
  • ½ tsp. salt

Directions

  1. Heat the olive oil in a small pot over medium heat. Add the red onion and sauté for 5-7 minutes or until the onion becomes soft. Add the garlic and stir for 20-30 seconds.
  2. Add the chili powder, cumin, oregano, and paprika and give the mixture a stir.
  3. Add the tomato paste, date paste, apple cider vinegar, and water or broth to the pot. Stir well and break up the date paste with a spoon. Once the sauce begins to boil, reduce the heat to medium-low.
  4. Take half of the salt and add to the mixture. Allow to cook for about 10 minutes, stirring occasionally, until the sauce has thickened enough to coat a spoon.
  5. Use a blender or immersion blender to puree the sauce. Add salt to taste and a small amount of water if needed to achieve the desired thickness.

Cherry Chocolate Biscotti

Cherry Chocolate Biscotti

This delicious cherry chocolate biscotti is made with DateME date paste and is vegan and gluten free. Goes great with that afternoon cup of coffee or as a sweet breakfast treat.

Cherry Chocolate Biscotti are baked goods made with DateME Boutique Date Paste

Ingredients

  • 1 cup almond flour
  • ¼ cup tapioca starch/flour
  • ¼ cup white rice flour
  • 1 Tbsp. coconut sugar (plus extra for dusting)
  • ½ Tbsp. coconut flour
  • ¼ cup butter, cold and cut into pieces
  • ¼ cup DateME Date Paste, cold and cut into pieces
  • ¾ tsp. vanilla extract
  • 1 egg
  • ½ tsp. baking soda
  • ¼ cup dried cherries
  • ½ cup chocolate chips, melted (for dipping)

Directions

  1. Add the almond flour, tapioca starch, white rice flour, coconut flour, coconut sugar, and baking soda to a food processor and pulse 5-10 times.
  2. Add the butter and date paste to the food processor and pulse until well incorporated.
  3. Add the vanilla extract and egg and pulse until combined.
  4. Fold in the dried cherries and form the dough into a ball. Refrigerate the dough for 20-30 minutes.
  5. Preheat oven to 325°F. Lay the dough out on a parchment covered sheet pan and form it into a slightly raised rectangle about 9”x4” in size. You can sprinkle the top of the dough with a little coconut sugar if you’d like.
  6. Bake for 15-20 minutes or until the underside of the biscotti just starts to brown.
  7. Remove from the oven and allow it to cool slightly. Carefully cut the biscotti into ¾”-1” thick pieces. Carefully separate the cookies and place them on their sides. Bake for an additional 5 minutes on each side, then remove the biscotti from the oven and allow them to fully cool. After they cool, place them in the fridge for 15-20 minutes.
  8. While the biscotti is cooling, melt the chocolate chips in a microwave for 30 seconds at a time, stirring in between.
  9. When the biscotti is ready, dip the bottom of the cookies into the chocolate and spread/flatten the chocolate out with a spatula or the back of a spoon. Place them in the fridge chocolate side up to set.
  10. When the chocolate has set, flip them over and drizzle chocolate over the top of the biscotti. Allow the chocolate to set, then enjoy!
